Established and scaled multiple independent, high-volume, street-side restaurant concepts including The Keg, The Boat House, and Chilis, mastering critical domains like lease negotiation, high-efficiency kitchen flow, and managing complex labor dynamics.
ECG successfully secures its initial major airport concession contract launching Chilis in YEG and YYC. This period was crucial for building and documenting proprietary protocols for airside logistics, security compliance, and achieving operational maturity within the unique constraints of airport regulatory environments.
Strategic focus shifts to multi-unit management across YEG and YYC. Develops brands and proprietary culinary concepts designed for scalable regional sourcing. Develops and operates 6 full service restaurant operations.
Executed aggressive, capital-intensive growth strategy across Western Canada (YEG, YYC, YVR). Successfully designed, developed, and launched 6 high-performing new restaurant operations in the past 18 months, demonstrating robust CAPEX execution and market agility during industry recovery.
